Gorgonzola is one of the oldest blue cheeses in the world, dating back to the 9th century in Italy. It’s named after the town of Gorgonzola, near Milan, where it was first produced.
The distinct blue veins are created by introducing Penicillium mold during the cheese-making process.
There are two types: Gorgonzola Dolce (milder and creamier) and Gorgonzola Piccante (firmer and sharper).
It pairs exceptionally well with honey, pears, walnuts, and red wine.
