Asiago cheese originated from the Asiago plateau in Italy and has been produced since the Middle Ages.
It comes in two varieties: fresh Asiago (Asiago Pressato), which is mild and soft, and aged Asiago (Asiago d’allevo), which is firmer with a stronger flavor.
